Triple Chocolate Cheesecake Bars
Ingredients
For the Chocolate Crust
5 tbsp butter, melted
1 ¼ cup almond flour
2 tbsp cocoa powder
2 tbsp powdered sweetener (allulose or monkfruit recommended for no aftertaste)
For the Chocolate Cheesecake Filling
8 oz reduced-fat cream cheese (room temperature)
¼ cup plain Greek yogurt
1 large egg, room temperature
½ cup powdered sweetener
⅓ cup cocoa powder
1 tbsp vanilla extract
For the Ganache
¾ cup 70–85% dark chocolate (instead of 1 cup to reduce calories, use stevia-sweetened if desired)
¾ cup heavy cream
Instructions
Prep: Preheat oven to 350°F (180°C). Line an 8×8 baking pan with parchment paper.
Make the crust: Mix almond flour, cocoa, sweetener, and melted butter until crumbly but moist. Press evenly into the pan. Bake 8–10 minutes. Cool completely.
Cheesecake layer: Beat cream cheese, Greek yogurt, and egg until smooth. Add sweetener, cocoa powder, and vanilla; beat until creamy. Spread over cooled crust. Bake ~30 minutes until set in the center. Cool completely.
Ganache: Warm cream (and almond milk if using) to a simmer. Pour over chopped dark chocolate. Let sit 1 minute, then whisk until silky.
Finish: Spread ganache over cooled cheesecake. Chill at least 3 hours before slicing into bars.
