- 1 cup dark chocolate or stevia-sweetened chocolate (70%+)

Instructions
- 1Add the coconut cream, pistachios, cashews, dates, and vanilla to a food processor or high-speed blender. Blend until thick and creamy.
- 2Scoop the mixture into 14 bite-sized portions onto a parchment-lined tray.
- 3Freeze for about 2 hours, or until the bites are firm enough to dip.
- 4Melt the chocolate gently in the microwave or over a double boiler. Stir in optional sweetener if using.
- 5Dip each frozen bite into the melted chocolate, then place back on the tray and finish with flaky salt or chopped nuts if desired.
- 6Freeze again for 10–15 minutes until the chocolate is set, then serve or store frozen.
