Ingredients

  • 1 flatbread from homemade dough (recipe below)
  • 4 oz cooked chicken breast, diced or shredded
  • 1/2 cup part-skim mozzarella cheese
  • 2 tbsp sauce of choice
  • optional red onion, bell pepper, spinach, mushrooms, or jalapeños
  • to taste garlic powder, Italian seasoning, salt, black pepper, and red pepper flakes
  • optional fresh basil, parmesan, hot honey, or balsamic glaze after baking

Homemade Flatbread Dough

  • 1 3/4 cups flour
  • 3/4 cup nonfat Greek yogurt
  • makes 3 thinner flatbreads

Kev Tip

Pre-bake the crust first. That is the easiest way to keep the flatbread crisp and stop the middle from going soft once the sauce and cheese go on.
Make It Fit Your Macros This version uses a thinner flatbread (1/3 of the dough) to keep carbs and calories in check while still keeping that real flatbread texture.
Want it bigger? Use half the dough for a thicker crust.
Cutting? Swap in a low-carb wrap base.
More protein: bump chicken to 5–6 oz.
Best Fresh This is best right out of the oven, but you can prep the dough and toppings ahead to make it a very fast weeknight dinner.

Instructions

  1. 1Preheat oven to 425°F.
  2. 2Mix the flour and nonfat Greek yogurt until a dough forms. Knead until mostly smooth, then divide into 3 portions.
  3. 3Roll one portion into a thin flatbread shape and place on a parchment-lined sheet pan.
  4. 4Pre-bake the flatbread for 5–6 minutes so it firms up and stays crisp once topped.
  5. 5Top with sauce, mozzarella, chicken, and any extra toppings you want.
  6. 6Season lightly with garlic powder, Italian seasoning, and black pepper.
  7. 7Bake another 7–10 minutes, or until the cheese is melted and the edges are golden.
  8. 8Finish with basil, parmesan, hot honey, or balsamic glaze if using, then slice and serve.
