Ingredients

  • 50g romaine lettuce, chopped
  • 5g parmesan cheese
  • 10g light Caesar dressing or homemade Caesar
  • 1 Mission low carb wrap
  • 1 tbsp croutons, optional
  • 120g chicken breast, cut into bite-sized pieces
  • 25g cornflakes, crushed
  • 1 egg white
  • to taste Meat Church Blanco seasoning

Crush the cornflakes fine, but not dusty. You want enough texture to stay crunchy, but small enough pieces that they actually stick and brown evenly in the air fryer.

More dressing: use a Greek yogurt-based homemade Caesar to keep it lighter.
More volume: add extra romaine without changing much else.

Instructions

  1. 1Season the chicken pieces with Meat Church Blanco.
  2. 2Dip the chicken into the egg white, then coat well in the crushed cornflakes.
  3. 3Air fry at 200°C / 400°F for about 12 minutes, or until golden, crispy, and cooked through. You can also shallow fry in avocado oil if preferred.
  4. 4In a bowl, toss the romaine with parmesan and Caesar dressing. Season lightly with more Blanco or black pepper if needed.
  5. 5Warm the wrap slightly so it folds easier, then fill with the Caesar salad, crispy chicken, and croutons if using. Drizzle over any extra dressing.
  6. 6Toast the wrapped wrap in a medium pan for about 2 minutes per side until sealed and lightly golden. Slice in half and serve right away.
