Cheesy Baked Chicken Flautas
Crispy, cheesy chicken flautas made lighter with low-carb tortillas.
These baked chicken flautas are crunchy, cheesy, and way easier to fit than the deep-fried version. Shredded chicken, creamy cheese, spices, and low-carb tortillas come together for a high-protein meal or snack that still feels fun.

Ingredients
- 2 cups shredded rotisserie chicken
- 4 low-carb street taco tortillas
- 1/2 cup shredded Mexican blend or cheddar cheese
- 1/4 cup Neufchâtel cheese
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp smoked paprika
- 1/2 tsp cumin
- 1/4 tsp salt
- 1 tbsp olive oil or avocado oil, for brushing
- optional salsa, Greek yogurt, cilantro, guacamole, or hot sauce
Kev Tip
Warm the tortillas first.
Low-carb tortillas can crack when rolled cold. Warm them for a few seconds before filling so they roll tightly and crisp better.
Make It Fit Your Macros
Lower calorie: use less shredded cheese and Greek yogurt as the dip.
Higher protein: add more chicken to the filling or serve with a high-protein dip.
More satisfying meal: pair 2 flautas with a side salad, salsa, or Mexican-style cauliflower rice.

Storage Notes
Store leftovers in the fridge and reheat in the air fryer or oven to bring the crisp back. Microwave works, but the tortillas will soften.
Instructions
- 1Preheat oven to 400°F or air fryer to 375°F. Lightly grease a baking sheet or air fryer basket.
- 2In a bowl, combine shredded chicken, shredded cheese, Neufchâtel cheese, garlic powder, onion powder, smoked paprika, cumin, and salt.
- 3Warm tortillas briefly so they are flexible.
- 4Spoon filling onto the bottom third of each tortilla and roll tightly.
- 5Place seam-side down on the baking sheet or in the air fryer basket.
- 6Brush or spray lightly with oil.
- 7Bake for 12–15 minutes, or air fry for 8–10 minutes, flipping once, until golden and crispy.
- 8Serve with salsa, Greek yogurt, cilantro, guacamole, or hot sauce.
Weight Loss / Meal Prep Notes
Easy portion control.
One flauta works as a snack, while two can become a meal when paired with a high-volume side like salad, slaw, or vegetables.
Best texture move.
Don’t overfill them. A tighter roll crisps better and is less likely to split while cooking.
