Ingredients

  • 2 cups shredded rotisserie chicken
  • 4 low-carb street taco tortillas
  • 1/2 cup shredded Mexican blend or cheddar cheese
  • 1/4 cup Neufchâtel cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/4 tsp salt
  • 1 tbsp olive oil or avocado oil, for brushing
  • optional salsa, Greek yogurt, cilantro, guacamole, or hot sauce

Warm the tortillas first. Low-carb tortillas can crack when rolled cold. Warm them for a few seconds before filling so they roll tightly and crisp better.

Instructions

  1. 1Preheat oven to 400°F or air fryer to 375°F. Lightly grease a baking sheet or air fryer basket.
  2. 2In a bowl, combine shredded chicken, shredded cheese, Neufchâtel cheese, garlic powder, onion powder, smoked paprika, cumin, and salt.
  3. 3Warm tortillas briefly so they are flexible.
  4. 4Spoon filling onto the bottom third of each tortilla and roll tightly.
  5. 5Place seam-side down on the baking sheet or in the air fryer basket.
  6. 6Brush or spray lightly with oil.
