Blondie Brownies

Almond Flour Chocolate Chip Blondies

Ingredients

  • 2 cups almond flour
  • 1 tsp baking powder
  • 1 tsp xanthan gum
  • 1 cup golden monk fruit sweetener or brown sugar stevia
  • 2 large eggs
  • 1/2 cup butter, softened
  • 1 tsp vanilla extract
  • 1/2 cup stevia chocolate chips

Instructions

  1. Preheat: Oven to 350°F. Line an 8x8 baking dish with parchment paper.
  2. Mix Dry: In a bowl, whisk almond flour, baking powder, xanthan gum. Set aside.
  3. Cream Butter & Sweetener: In another bowl, beat softened butter with monk fruit sweetener until fluffy. Add eggs and vanilla, mix until smooth.
  4. Combine: Gradually stir dry mixture into wet ingredients. Fold in chocolate chips.
  5. Bake: Spread into dish and bake for 20–25 min or until golden. Toothpick should come out with moist crumbs.
  6. Cool & Slice: Let cool completely, then cut into 12 blondies.
