High-Protein Marshmallow Crispy Treats

Sweet, chewy, nostalgic crispy treats with a protein upgrade.

These high-protein marshmallow crispy treats keep the classic gooey-crunchy texture, but add vanilla protein powder and a smarter cereal base to make them more filling. Perfect when you want a dessert that still fits the plan.

Ingredients

  • 28g unsalted butter
  • 60ml milk of choice
  • 1/2 tsp vanilla extract
  • pinch salt
  • 200g ChocZero S’mallows or marshmallows
  • 120g vanilla protein powder
  • 4 cups sprouted brown rice cereal
  • optional high-protein puffs like Magic Spoon or Catalina Crunch

Kev Tip

Pull the pot off the heat before adding protein. Too much heat can make protein powder clump or turn gritty. Melt the marshmallows first, then remove from heat and stir in the protein.
Make It Fit Your Macros Lower calorie: cut into 12 smaller bars instead of 10.
Higher protein: swap part of the cereal for high-protein puffs.
More dessert-like: drizzle melted chocolate or add mini chocolate chips after pressing into the pan.
Storage Notes Store in an airtight container at room temperature for the softest texture. Refrigerating can make them firmer, but it works if you like a chewier bar.

Instructions

  1. 1Line a 9x9-inch dish with parchment paper and lightly spray with cooking spray.
  2. 2In a large pot over low heat, melt the butter.
  3. 3Add the marshmallows and stir gently until melted and smooth.
  4. 4Stir in the milk, vanilla, and salt until combined.
  5. 5Remove the pot from heat, then stir in the protein powder until mostly smooth.
  6. 6Fold in the rice cereal until evenly coated. Work quickly before the mixture firms up.
  7. 7Press into the lined dish using lightly greased hands or parchment paper.
  8. 8Let cool for 30–45 minutes, then slice into 10 bars.

Better than free-for-all snacking. These are portioned, sweet, and more filling than a standard crispy treat because of the added protein. Keep them pre-cut so “one bar” actually stays one bar.
Texture move. Don’t pack them down too hard. A light press keeps them softer and more like classic marshmallow crispy treats.
