Gochujang Chicken Lettuce Boats

Gochujang Chicken
Servings: 3 (2 lettuce boats per serving, 3 oz chicken each)
Prep Time: 10 min
Total Time: 30–40 min

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 50g gochujang paste
  • 40–50 ml hot water
  • 10g stevia (adjust to taste)
  • Black pepper
  • 3 cloves garlic, minced

Instructions

  1. Mix gochujang paste with hot water until smooth.
  2. Add stevia, black pepper, and minced garlic. Stir well.
  3. Coat chicken thighs in the marinade and let sit at least 30 min (or overnight).
  4. Cook chicken via oven (375°F, 25–30 min), grill (6–7 min/side), or air fryer (390°F, ~12 min).
  5. Let rest before slicing. Serve in lettuce wraps or with rice/veggies.
