Blackened Chicken Bowls with Hot Honey Dressing

Blackened Chicken
- 2 lbs chicken breast or thighs
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 2 tsp kosher salt
- 2 tsp chili powder
- 1 tsp black pepper
- ½ tsp cumin
- ½ tsp coriander
- ¼ tsp red pepper flakes
- 2 tbsp mayonnaise
Roasted Sweet Potatoes
- 1 lb sweet potatoes, cubed
- 1 tbsp olive oil
- ½ tsp salt
- ½ tsp onion powder
- ½ tsp garlic powder
- ½ tsp chili powder
- ½ tsp nutritional yeast
Hot Honey Dressing
- ¼ cup olive oil
- ¼ cup Dijon mustard
- 2 tbsp sugar-free honey or syrup
- 2 tbsp apple cider vinegar
- ½ tsp kosher salt
- 1 tsp red pepper flakes
Cabbage-Carrot Slaw
- 4 cups cabbage, thinly sliced
- 1½ cups shredded carrot
- ¼ cup mayonnaise
- 1 tbsp Dijon mustard
- 1 tbsp sugar-free honey or syrup
- 2 tbsp apple cider vinegar
- 1 tsp kosher salt
- 1 tsp dried parsley
- ¼ tsp black pepper
- Juice of 1 lime
Instructions
- Marinate chicken with oil, vinegar, seasonings, and mayo. Sear in skillet 5–7 min per side. Rest and slice.
- Cube and season sweet potatoes. Roast at 400°F for 25–30 min.
- Whisk all hot honey dressing ingredients together. Set aside.
- Make slaw by mixing cabbage & carrots with dressing ingredients. Toss to coat.
- Assemble bowl: sweet potatoes base, topped with chicken, slaw, and drizzle of hot honey dressing.
