Kev Tip Let the chicken sit a few minutes before slicing so it stays juicy, and roast the sweet potatoes spread out so they actually caramelize.
Make It Fit Your Macros Lower calories: use less dressing or halve the sweet potatoes.
Higher carbs: add rice or extra sweet potato.
Higher protein: bump the chicken portion and keep everything else the same.
Storage / Meal Prep Store chicken, potatoes, slaw, and dressing separately. Best meal-prepped for 3–4 days.

Instructions

  1. 1Marinate the chicken with olive oil, balsamic vinegar, salt, chili powder, black pepper, cumin, coriander, red pepper flakes, and Greek yogurt or light mayo.
  2. 2Let it sit for at least 20–30 minutes if possible, then sear in a hot skillet or grill pan for about 5–7 minutes per side until fully cooked. Rest, then slice.
  3. 3Toss the sweet potatoes with oil and seasonings. Roast at 400°F for 25–30 minutes, flipping once, until tender and browned.
  4. 4Whisk together the hot honey dressing ingredients until smooth. Add a splash of water if you want it looser.
  5. 5Mix the slaw ingredients in a large bowl until evenly coated.
  6. 6Assemble each bowl with roasted sweet potatoes, sliced blackened chicken, slaw, and a drizzle of hot honey dressing.
