Chipotle Chicken Avocado Melt (Hero Bread)

Smoky chipotle mayo, melty provolone, creamy avocado, and juicy chicken on toasted Hero bread.

This is one of those fast meals that still feels like an actual comfort-food sandwich. You get smoky heat from the chipotle, creaminess from the avocado and mayo, and plenty of protein from the chicken, all built on high-fiber Hero bread.

Ingredients

  • 2 slices Hero bread (low-carb, high-fiber)
  • 4 oz cooked chicken breast, shredded
  • 1 slice provolone cheese
  • 2 tbsp light mayo
  • 1/2 avocado, sliced or mashed
  • 1 tbsp adobo sauce (from a chipotle can)
  • 1/2 pepper chipotle pepper, diced
  • optional spinach or arugula
Kev Tip Toast the bread before assembling so it holds up better and gives the finished sandwich more structure when you grill it.

Want more volume? Add greens inside or serve with a crunchy side salad.
Want more heat? Add a little extra adobo or more diced chipotle.

Instructions

  2. 2Mix the light mayo with the adobo sauce and diced chipotle pepper.
  3. 3Spread the chipotle mayo on both slices of bread.
  4. 4Layer on the chicken, avocado, provolone, and optional greens.
  5. 5Grill the sandwich until the cheese melts and the outside is golden, about 2–3 minutes per side.
