Breakfast Burrto & Adobo Sauce

Bacon, Egg, Cheese & Potato Burrito

Ingredients

  • 1 HERO Tortilla (regular)
  • 2 large eggs
  • 2 slices nitrate-free bacon
  • 100g Yukon Gold potatoes, diced
  • ¼ avocado (about 50g), sliced
  • ¼ cup shredded sharp cheddar cheese
  • Salt and pepper to taste
  • 2 tbsp Adobo Yogurt Sauce (see below)

Adobo Yogurt Sauce

  • ¼ cup plain Greek yogurt or light sour cream or light mayo
  • 1 chipotle pepper in adobo, finely chopped
  • 1 tsp adobo sauce (from the can)
  • Juice of ½ lime
  • Pinch of garlic powder + salt to taste

Instructions

  1. Air fry or roast diced potatoes at 400°F for ~15–20 minutes until golden and crispy.
  2. Cook bacon at 375°F on a foil-lined pan in the oven for 18–20 minutes or until crisp, or pan-fry if preferred.
  3. Scramble eggs with salt and pepper.
  4. Warm the HERO tortilla on a skillet or in the microwave.
  5. Layer eggs, bacon, potatoes, cheese, avocado, and sauce into the center of the tortilla.
  6. Wrap tightly. Optional: pan-sear the burrito for a crispy finish.
  7. Serve hot with extra sauce or your favorite hot sauce on the side.

Lower the Calories

Want to lighten it up? Try using 1 egg + 2 egg whites, skip the avocado, reduce the cheese to 2 tbsp, or swap in turkey bacon. You’ll still get plenty of flavor and protein!
