- 1 HERO tortilla, regular
- 2 large eggs
- 2 slices nitrate-free bacon
- 100g Yukon Gold potatoes, diced
- 50g avocado, about 1/4 avocado, sliced
- 1/4 cup shredded sharp cheddar cheese
- to taste salt and pepper
- 2 tbsp adobo yogurt sauce
Adobo Yogurt Sauce
- 1/4 cup plain Greek yogurt, light sour cream, or light mayo
- 1 chipotle pepper in adobo, finely chopped
- 1 tsp adobo sauce from the can
- 1/2 lime juiced
- pinch garlic powder
