Breakfast Burrto & Adobo Sauce
Bacon, Egg, Cheese & Potato Burrito

Ingredients
- 1 HERO Tortilla (regular)
- 2 large eggs
- 2 slices nitrate-free bacon
- 100g Yukon Gold potatoes, diced
- ¼ avocado (about 50g), sliced
- ¼ cup shredded sharp cheddar cheese
- Salt and pepper to taste
- 2 tbsp Adobo Yogurt Sauce (see below)
Adobo Yogurt Sauce
- ¼ cup plain Greek yogurt or light sour cream or light mayo
- 1 chipotle pepper in adobo, finely chopped
- 1 tsp adobo sauce (from the can)
- Juice of ½ lime
- Pinch of garlic powder + salt to taste
Instructions
- Air fry or roast diced potatoes at 400°F for ~15–20 minutes until golden and crispy.
- Cook bacon at 375°F on a foil-lined pan in the oven for 18–20 minutes or until crisp, or pan-fry if preferred.
- Scramble eggs with salt and pepper.
- Warm the HERO tortilla on a skillet or in the microwave.
- Layer eggs, bacon, potatoes, cheese, avocado, and sauce into the center of the tortilla.
- Wrap tightly. Optional: pan-sear the burrito for a crispy finish.
- Serve hot with extra sauce or your favorite hot sauce on the side.

Want to lighten it up? Try using 1 egg + 2 egg whites, skip the avocado, reduce the cheese to 2 tbsp, or swap in turkey bacon. You’ll still get plenty of flavor and protein!
