Ingredients

  • 2 large ripe bananas, mashed
  • 1 cup whole wheat flour
  • 1/2 cup vanilla whey protein powder
  • 1/4 cup nonfat Greek yogurt
  • 3 whole eggs
  • 1/4 cup avocado oil
  • 1/4 cup sweetener of choice
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • pinch salt

Use very ripe bananas. The darker and spottier the bananas, the sweeter and more banana-forward the loaf tastes.
Make It Fit Your Macros Lower calorie: reduce avocado oil slightly and use extra Greek yogurt.
Higher protein: serve with Greek yogurt, skyr, or a protein coffee.
More dessert-like: add chocolate chips, walnuts, or a light drizzle of nut butter.
Storage Notes Cool completely before slicing. Store in the fridge for best texture, or freeze slices individually for grab-and-go snacks.

Instructions

  1. 1Preheat oven to 350°F. Grease or line a loaf pan.
  2. 2Mash bananas in a large bowl.
  3. 3Mix mashed bananas with Greek yogurt, eggs, avocado oil, sweetener, and vanilla.
  4. 4In another bowl, combine whole wheat flour, vanilla whey, cinnamon, baking soda, and salt.
  5. 5Fold dry ingredients into wet ingredients until just combined.
  6. 6Pour batter into the loaf pan and smooth the top.
  7. 7Bake 35–45 minutes, or until a toothpick comes out clean.
  8. 8Tent with foil if the top browns too quickly.
  9. 9Cool completely before slicing.

This is a better-balanced banana bread. It still tastes like banana bread, but the whey and Greek yogurt give it more protein and staying power than a standard slice.
Best texture move. Do not overmix after adding the flour and protein powder. Stir just until combined to keep the loaf soft.
