Coconut Milk Berry Popsicles

These coconut milk berry popsicles are cold, creamy, lightly sweet, and perfect for summer. They’re lower sugar, easy to prep, and can be made dairy-free or swirled with Greek yogurt for extra creaminess.

Ingredients

  • 13.5 oz lite coconut milk, or full-fat for creamier pops
  • 1 1/2 cups mixed berries, fresh or frozen
  • 2–3 tbsp sugar-free maple syrup or sugar-free honey
  • 1 tsp vanilla extract
  • 1 tbsp chia seeds, optional
  • pinch salt
  • optional 2–3 tbsp Greek yogurt for a creamy swirl

Flavor Variations

Berry Coconut Use mixed berries, lite coconut milk, vanilla, and sugar-free honey or maple syrup. Add chia for texture or Greek yogurt for a creamy swirl.
Lemon Blueberry Use only blueberries, then add 1 tsp lemon zest and 1 tsp lemon juice for a brighter, sharper flavor.
Tropical Mango Swap berries for 1 cup frozen mango and 1/2 banana. Add lime zest for brightness and a more tropical flavor.

Instructions

  1. 1Blend coconut milk, 1 cup berries, sugar-free syrup, vanilla, and salt until smooth.

  3. 3If using Greek yogurt, spoon a little into each mold and swirl gently.
  4. 4Pour mixture into popsicle molds.
  5. 5Insert sticks and freeze for 4–6 hours, or until solid.
  6. 6To release, run warm water over the outside of the mold for 10–15 seconds.

Summer Dessert Notes

This is a lighter frozen treat. These are great when you want something creamy and cold without a heavy dessert. They’re not high protein unless you add Greek yogurt or collagen.
Best texture move. Let the popsicle sit for 1–2 minutes after unmolding so the outside softens slightly before eating.
