Ingredients

For the Steak

  • 1¼ lb flank, sirloin, or NY strip steak
  • 1 tsp kosher salt + ½ tsp black pepper
  • 1 tsp smoked paprika (optional)
  • 1 tbsp olive or avocado oil

For the Chimichurri

  • ¾ cup fresh parsley, finely chopped
  • 2 tbsp fresh oregano (or 1 tsp dried)
  • 3 cloves garlic, minced
  • 1 small red chile or ½ tsp red pepper flakes
  • ¼ cup red wine vinegar
  • ⅓ cup extra virgin olive oil
  • ½ tsp kosher salt + black pepper to taste

For Assembly

  • 8 low-carb slider buns (see bread options below)
  • 4 slices provolone or mozzarella cheese, halved
  • ¼ cup light or olive-oil mayo + 1–2 tsp chipotle or sriracha
  • Caramelized or pickled onions (optional)

Bread Options

  • Hero Slider Buns (preferred low-carb option)
  • Lettuce “buns” using butter lettuce or romaine leaves
  • Egg-white wraps (Egglife) — quartered for mini sliders
  • Keto buns such as Sola, Franz, or ThinSlim
  • Mini portobello caps, roasted and patted dry

Instructions

  1. Make the chimichurri: Combine parsley, oregano, garlic, chile, vinegar, oil, salt, and pepper. Let sit 10–15 minutes.
  2. Cook the steak: Pat dry, season, and sear in a hot skillet for 3–4 minutes per side (medium-rare). Rest 8–10 minutes, then slice thinly.
  3. Toast buns: Lightly toast Hero or chosen buns. For egg wraps, warm in a dry pan; lettuce should be crisp and dry.
  4. Assemble: Add steak and cheese to each bun. Broil briefly to melt cheese if desired.
  5. Finish: Top with chimichurri, a drizzle of spicy mayo, and onions. Serve immediately.
