Kev Tip

Use the seasoning packet when life is busy. A butter chicken packet like Shan or Bombay Kitchen can replace the spices and make this way easier on a weeknight.
Make It Fit Your Macros Lower fat: use chicken breast and half-and-half instead of heavy cream.
More volume: add spinach, cauliflower, peas, or extra onion.
Higher carb: add rice, roasted potatoes, or extra naan.
Meal Prep Notes Store chicken and naan separately. Reheat naan in a dry skillet so it stays soft with lightly crisp edges.

Instructions

  1. 1Marinate chicken with Greek yogurt, garlic, ginger, spices, salt, and pepper for at least 20 minutes.
  2. 2Sear marinated chicken in a hot pan until browned. Remove and set aside.
  3. 3Optional smoky method: grill chicken whole, then cube and add to the sauce during the simmer.
  4. 4Sauté onion in ghee or butter until golden.
  5. 5Add garlic, ginger, cumin, paprika, and garam masala. Cook until fragrant.
  6. 6Add crushed tomatoes and simmer 10 minutes. Blend for a silky sauce if desired.
  7. 7Return chicken to skillet, stir in cream or half-and-half, and simmer until thick and glossy.
  8. 8For naan, mix self-rising flour and Greek yogurt into a dough.
  9. 9Knead briefly, divide into 8 pieces, roll flat, and pan-sear 2–3 minutes per side.
  10. 10Serve butter chicken warm with naan and optional rice. Garnish with cilantro and lemon.

Dinner Notes

Macro clarity. The rice option includes butter chicken, naan, and 1/2 cup cooked rice.
Best texture move. Sear the chicken first. Browning before simmering gives the sauce much deeper flavor.
Naan shortcut. Self-rising flour already has leavening and salt, which keeps this simple.
