Ingredients

Butter Chicken (Serves 6)

  • 1.5 lbs boneless skinless chicken thighs, bite size
  • 1 cup plain Greek yogurt
  • 1 Tbsp grated ginger
  • 1 Tbsp minced garlic
  • 1–2 tsp garam masala
  • 1 tsp turmeric
  • 1 tsp chili powder
  • Salt & pepper
  • 2 Tbsp ghee or butter
  • 1 onion, finely diced
  • 3 cloves garlic, minced
  • 1 Tbsp grated ginger
  • 1 can (14 oz) crushed tomatoes
  • 1 tsp cumin + 1 tsp paprika + 1 tsp garam masala
  • 1 cup heavy cream (or half-and-half to lighten)

✨ Shortcut option: Replace all spices with 1 store-bought butter chicken seasoning packet (like Shan/Bombay Kitchen).

2-Ingredient Naan (Makes 8)

  • 1 cup self-rising flour
  • 1 cup plain Greek yogurt

Instructions

  1. Marinate chicken with yogurt, garlic, ginger, and spices (20 mins minimum; overnight for best flavor).
  2. Sear marinated chicken in a hot pan until browned; remove and set aside.
  3. Alternatively: Grill chicken whole for smoky flavor, then cube and add to sauce during the simmer.
  4. Sauté onion in ghee until golden; add garlic + ginger + spices.
  5. Add crushed tomatoes; simmer 10 minutes (blend for silky sauce if desired).
  6. Return chicken to skillet, stir in cream, and simmer until thick + glossy.
  7. Mix flour + yogurt → knead → divide → pan-sear naan 2–3 mins per side.
  8. Serve warm with naan (and rice if using). Garnish with cilantro + lemon.

Tips: Swap chicken breast to cut fat, use half-and-half to lighten, add spinach or cauliflower for volume.
