Butter Chicken (Serves 6)
- 1.5 lbs boneless skinless chicken thighs, bite size
- 1 cup plain Greek yogurt
- 1 Tbsp grated ginger
- 1 Tbsp minced garlic
- 1–2 tsp garam masala
- 1 tsp turmeric
- 1 tsp chili powder
- Salt & pepper
- 2 Tbsp ghee or butter
- 1 onion, finely diced
- 3 cloves garlic, minced
- 1 Tbsp grated ginger
- 1 can (14 oz) crushed tomatoes
- 1 tsp cumin + 1 tsp paprika + 1 tsp garam masala
- 1 cup heavy cream (or half-and-half to lighten)
✨ Shortcut option: Replace all spices with 1 store-bought butter chicken seasoning packet (like Shan/Bombay Kitchen).
2-Ingredient Naan (Makes 8)
- 1 cup self-rising flour
- 1 cup plain Greek yogurt
Instructions
- Marinate chicken with yogurt, garlic, ginger, and spices (20 mins minimum; overnight for best flavor).
- Sear marinated chicken in a hot pan until browned; remove and set aside.
- Alternatively: Grill chicken whole for smoky flavor, then cube and add to sauce during the simmer.
- Sauté onion in ghee until golden; add garlic + ginger + spices.
- Add crushed tomatoes; simmer 10 minutes (blend for silky sauce if desired).
- Return chicken to skillet, stir in cream, and simmer until thick + glossy.
- Mix flour + yogurt → knead → divide → pan-sear naan 2–3 mins per side.
- Serve warm with naan (and rice if using). Garnish with cilantro + lemon.
Tips: Swap chicken breast to cut fat, use half-and-half to lighten, add spinach or cauliflower for volume.
