These smash burger tacos take everything good about a diner-style burger and make it faster, crispier, and easier to fit into your week. You get seasoned beef smashed thin, melty American cheese, crunchy lettuce, and a simple burger sauce wrapped in low-carb tortillas.

Ingredients

  • 1 lb 85/15 ground beef
  • 6 low-carb street taco tortillas
  • 3 slices American cheese, halved
  • 2 cups shredded butter lettuce or iceberg lettuce
  • to taste salt and black pepper
  • as needed cooking oil spray
  • optional pickles, jalapeños, diced onion, or sesame seeds

Burger Sauce

  • 1/4 cup light mayo or regular mayo
  • 1 tbsp ketchup
  • 1 tsp mustard
  • 1 tsp pickle juice
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • to taste salt and black pepper

Smash harder than feels normal. The magic is the crispy beef edge. Use a hot pan, press the beef thin, and let it sear before moving it.
Make It Fit Your Macros Lower calorie: use 93/7 beef, light mayo, and 1/2 slice cheese per taco.
Higher calorie: use 85/15 beef, full cheese, and extra sauce.
Lower carb: use lettuce wraps or Mission Zero street taco tortillas.
Storage / Meal Prep Notes These are best fresh, but you can prep the sauce and portion the beef ahead. Cook the tacos right before eating so the beef stays crispy and the tortilla does not get soggy.

Instructions

  1. 1Mix the burger sauce ingredients in a small bowl and refrigerate while you cook the tacos.
  2. 2Divide the beef into 6 equal portions. Roll loosely into balls and season with salt and pepper.
  3. 3Heat a skillet or griddle over medium-high heat. Lightly spray with oil.
  4. 4Place one beef ball on the hot pan, top with a tortilla, and smash firmly until the beef spreads thin under the tortilla.
  5. 5Cook for 2–3 minutes until the beef is browned and crisp around the edges.
  6. 6Flip, add cheese to the beef side, and cook 1–2 more minutes until the tortilla is lightly crisp and the cheese melts.
  7. 7Repeat with the remaining tacos.
  8. 8Top each taco with lettuce, burger sauce, and any optional toppings like pickles, jalapeños, or diced onion.
