- Season the chicken. In a bowl, toss cubed chicken thighs with olive oil, baking powder, black pepper, smoked paprika, garlic powder, onion powder, chili powder, and brown sugar until every piece is coated.
- Crisp it up. Heat a large nonstick skillet over medium heat. Add the light butter. Once melted, add chicken in a single layer (work in batches if needed). Cook 4–5 minutes per side until deeply golden and cooked through (165°F / 74°C).
- Finish Nashville-style. Lower the heat. Add a small extra knob of butter if you want it glossy, then sprinkle a little extra smoked paprika, garlic powder, onion powder, and chopped parsley. Toss until coated.
- Cook the pasta. Bring a pot of salted water to a boil. Cook protein pasta until just al dente. Drain and set aside.
- Make the cheese sauce. In a saucepan over low heat, warm the milk. Whisk in cream cheese until smooth. Add cheddar and whisk until melted. Stir in mustard and spices. Keep it low and slow to prevent graininess.
- Combine + serve. Fold pasta into the sauce. Taste and adjust salt, pepper, and chili powder. Plate mac with chicken bites on top (or side-by-side) and finish with parsley.
