Ingredients

Nashville Hot Chicken Bites

  • 2.2 lb boneless skinless chicken thighs, cubed
  • 2 tsp olive oil
  • 2 tbsp baking powder
  • 1.5 tsp black pepper
  • 2.5 tsp smoked paprika
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1.5 tsp chili powder
  • 2 tbsp dark brown sugar
  • 30 g light butter, plus extra to finish
  • 2 tbsp fresh parsley, chopped

Cajun Mac & Cheese

  • 270 g uncooked protein pasta, Goodles or Kaizen
  • 350 g 1% milk
  • 200 g reduced-fat cream cheese
  • 100 g low-fat sharp cheddar, shredded
  • 1.5 tbsp mustard
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp black pepper
  • 0.5 tsp chili powder
  • to taste kosher salt

Instructions

  4. 4Cook 4–5 minutes per side until deeply golden and cooked through to 165°F.
